Shrimp Fried Rice


Main ingredients -
Chopped Vegetables - cabbage, capsicum, etc
1/4 pound shrimps - tailless, cooked
1/2 cup peas
2 cups cooked rice - preferably left overnight
2 eggs
1/4 tsp oyster sauce - optional
1 tsp minced garlic
1 tsp red chilli powder or chili sauce
1 medium-sized onion, finely chopped
3 green onions
oil to cook
salt, pepper to taste

Marinade -
1 tbsp Teriyaki Sauce
1/4 tsp soy sauce
Fresh ground pepper or pepper powder
Pinch of Salt

Preparation -
Marinate the shrimps with the sauces, pepper and salt and keep aside for 10-15 minutes.

Beat the eggs, adding a small pinch of salt and pepper. Heat 1 tbsp oil in a wok or large saucepan and cook the eggs in it over medium heat for a minute. Set the fried eggs aside to be used later.

Add 2 tbsp of oil to the wok and stir fry the chopped onion, vegetables. garlic, peas and marinated shrimps for 5-7 minutes till the vegetables are cooked and shrimps become crispy. Set the mixture aside.

Heat 2 tbsp of oil to the same wok and add the cooked rice. Stir fry for 1-2 minutes, adding a tsp each of soy and oyster sauce, if desired. Add the vegetable-shrimp mixture to the rice and mix well. Add a pinch of salt adjusted according to taste. Add the eggs and mix thoroughly. Garnish with green onions and serve hot!

Note: This dish can also be made with cooked macaroni or fettucini (instead of rice) or using small, pieces of cooked chicken breast (instead of shrimps).
