Masala Dosa
For Dosa:
Ingredients:
1 cup rice
1/2 cup urad dal
1/2 tbsp chana dal for cripsiness
1/2 tsp fenugreek seeds
Salt
Oil
Preparation:
Soak rice, urad dal, chana daal and fenugreek seeds in a container for about 2 hours.
Grind the ingredients along with salt.
Refrigerate the batter till you use it. This helps fermentation of the batter and adds taste to the dosas.
For Bhaji (Stuffing)
Ingredients:
2 large Potatoes
1 large Onion
2 Green chillies
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1/2 tsp Chana dal
1/2 tsp Turmeric powder
Curry leaves
Coriander leaves
Oil
Salt
Preparation:
Boil potatoes, peel and mash them.
Heat oil and add mustard seeds and cumin seeds. When they start spluttering, add curry leaves, green chillies and chana dal and stir.
Add the chopped onions and fry till they are slightly golden brown.
Add a pinch of turmeric and the potatoes. Mix well and add salt to taste.
Keep strirring for 3-5 minutes and then pour a cup of water and cook till the water gets absorbed.
Add coriander leaves and the bhaji is ready.
For making the dosas, take a wide pan and spread a tsp of oil once heated. Spread the batter uniformly and in a thin layer and cover it with a lid for about 3 mins in low flame. When the dosas are almost done, spread some Bhaji on the dosa and fold the dosa over the bhaji like a crepe or sandwich.Take the dosa out in a minute once cooked/crispy.
