Oven Baked Fish Fry

This is an oven-baked variation of a very popular South Indian fried fish. The deep fried version has been described at the end.

Ingredients -
1-2 large, whole fish (salmon or pomfret)
small clove of garlic
1 tsp lime juice
3 tsp oil
salt to taste

Marinade -
1/2 tsp cumin powder
1/2 tsp coriander powder
1 1/2 tsp chilly powder
1/2 tsp turmeric powder
1 tsp crushed, ground pepper
1/2 tsp garam masala powder
1 tsp ginger-garlic paste

Preparation -
Mix the marinade well, adding some salt (I prefer 3/4 tsp) to it. Taste the marinade to make sure it tastes just as spicy as you like it. Add more chilly powder if you need to. Add the oil and mix well.
Make fine slits (about 3-4) in the fish, just enough for the spices to get in. Cover the surface of the fish with the marinade and rub nicely till evenly coated. Crush the clove of garlic and make into fine pieces. Insert the marinade and the pieces of garlic into the slits in the fish.

Preheat the oven to 350 deg (or higher if you want it crispier).
Squeeze some lime juice on the fish. Grease the baking dish with butter or oil and place the fish on it.
Bake for 25 minutes, turning the fish once after 15 minutes.
This could be served as a side-dish or appetizer.

If you like the fish deep fried and less spicy, cut the fish into medium sized pieces and apply the marinade to each portion. Coat each marinated fish in rice flour and deep fry in oil on a low flame for 4-5 minutes or till cooked.
