Karathe Phodi ( Fried Bitter Gourd)

Ingredients-
5 small Bitter Gourd
3 tsp chilli powder
Salt
Oil
Rice flour

Serves - 2 to 3

Method-
Cut the bitter gourd into thin circular slices. Add a pinch of salt and set aside for 30 mins.
Mix the chilli powder, salt and little water to make a thick, dry paste.
Squeeze the water off the bitter gourd slices.
Now coat them with the paste and then dip them in rice flour.
Heat oil in a pan and shallow fry the bitter gourd slices on medium flame till crispy/cooked - about 3-5 minutes.
This can be served as a starter or side dish.

This recipe is commnly used with Bamboo shoots, Plantains, Drumsticks, Kantola etc
