Karathe Kismuri (Bitter Gourd Dish)

Ingredients-
5 small Bitter Gourd (About 2 cups when chopped)
1/2 chopped onion
3/4 cup coconut
1 tsp coriander seeds
5 red chillies
1/4 tsp tamarind paste
Turmeric powder
Salt
Oil

Serves - 2

Method-
Chop the bitter gourd into small cubes.
Add a pinch of salt, turmeric powder and mix well. Set aside for 30 mins.
Heat 1 tsp of oil in a pan and roast the bitter gourd pieces till crispy and keep it aside.
Dry roast the red chillies and coriander seeds.
Grind coconut, tamarind, roasted coriander seeds and red chillies into a coaste mixture. Do not add water as we need a dry mixture.
Once done, add salt and mix well. (Note that we have already added salt to the bitter gourd pieces initially)
Mix the bitter gourd pieces with the ground paste and keep aside.
Take 1/2 tsp oil and roast the onions a bit. Once done, add it to the above mixture.
Dish is ready to be served.
