Simple Coconut-coated Shrimp Curry


Ingredients-
1/4-1/2 pounds fresh shrimp/prawns
1 tbsp ghee
4-6 curry leaves
1/2 tsp mustard seeds
1/2 tsp ginger-garlic paste
pinch of cardamon powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp chilly powder
1/2 tsp turmeric powder
1/4 cup coconut milk
3 dry red chillies
pepper to taste
salt to taste

Serves -2
Method -
Marinate the shrimps with ginger-garlic paste, turmeric powder, chilli powder, cumin powder, coriander powder and cardamom powder and keep aside for 1-2 hours. Heat the mustard seeds, curry leaves and dry red chillies in ghee on a low flame till the mustard seeds start to splutter. Add the marinated shrimps and stir fry till it turns slightly pink. Add the coconut milk, cover and cook for 3-5 minutes till the shrimps are cooked. Add salt and pepper and server hot!
