Simple Chicken Curry

This is a really simple, but very tasty chicken curry. Its handy to have this recipe when you have guests or hunger pangs at short notice.


Ingredients-
1 lb boneless skinless Chicken breasts or thighs
1 large chopped Onion
1 chopped tomato
4 green chillies

Marinade-
3 tbsp yogurt
4 cloves
1 tsp ginger powder/paste
1 tsp garlic paste
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp pepper powder
2 tsp chilli powder (as per spice desired)
1/4 tsp turmeric powder

Serves: 4

Method-

Marinade the chicken with the spices and keep covered for an hour.
Heat oil in a pan and fry the onions and chopped green chillies.
When the onions turn golden- brown, add the marinated chicken pieces.
Stir the mixture thoroughly, cover the pan and fry the chicken for about 5 minutes, stirring occasionally.
Stir the mixture, add the chopped tomatoes and mix well.
Cover and cook for about 10 minutes, stirring occasionally.
Stir together the remaining portion of the marinade with water and pour into the pan.
Add some water to the mixture, enough to completely cover the chicken.
Cover and cook on low flame for about 15-20 minutes or till the chicken pieces look tender and cooked.
The Chicken is ready to serve!
