Pav Bhaji


The famous Indian fast food! Thanks to Rashmi for posting this recipe.
Ingredients-
1 large onion
1 large tomato
2 medium sized potatoes
1 large capsicum
1½ cup cauliflower florets
1/2 cup carrot slices
1/2 cup green peas
3 Tbsp Oil or butter
1½ tsp ginger paste
1½ tsp garlic paste
½ tsp turmeric powder
½ tsp chili powder
3 tsp pav bhaji masala powder
2 tsp coriander powder
2 tsp cumin powder
3 tsp oil (or butter)
salt to taste
Cilantro for garnishing

Serves -4 

Method-
Cut capsicum into small pieces and boil with cauliflower and carrots. Boil potatoes separately and  remove the skin. Mash all boiled vegetables and keep aside.
In a wok, heat oil (or butter). Add finely chopped onions, a pinch of salt and sauté till they soften.
Add ginger paste, garlic paste and sauté some more. Add the cut tomatoes and all the powders (turmeric, chilli, pav-bhaji masala, coriander and cumin).
Mix well adding a little water from the boiled vegetables, if necessary. Saut
é till the mixture leaves oil. Add all the mashed veggies and green peas. Add salt and water as necessary.
Cook for some more time. Add ¼ tsp of pav-bhaji masala again at the end to add more flavor.
Add a dallop of butter and garnish with cilantro/coriander.
Serve with lemon, raw onions and pav.
