Veg Pulao


Ingredients-
1 cup Basmati rice
3 white bread slices
1 Bay leaf
3 Cloves
1/4 cup Cashew nuts
1 inch Cinnamon stick strip or 1/4 tsp Cinnamon powder
1 small chopped onion
3 green chillies
1/4 cup fresh Green Peas
1/2 cup Veggies (Beans, Cauliflower etc)
2 tsp garam masala
Coriander leaves
Salt to taste
1 tb spn ghee

Serves - 3
Method -
Soak rice for about 30 mins and keep aside.
Heat ghee in a wide container. Add bay leaf, cloves, cashew nuts, cinnamon and saute for 2 mins.
Add chopped onion, green chillies and saute till onions turn golden brown.
Add veggies, green peas and saute for 5 mins. Then add garam masala and mix well.
Add rice and saute for a few mins. Add salt and 2 cups of water. Cover the container and cook well till the water is completely absorbed. If the rice is still uncooked,  add little bit of water and cook for some more time.
Cut the bread slices into small sqare shaped pices. In a separate pan roast the bread cubes in ghee and keep aside.
Once rice is cooked, garnish with coriander leaves and the bread cubes.
Pulao is now ready to be served.
