Shahi Egg Curry

Ingredients:
6 Eggs – Hard Boiled
2 Onions (1 big and 1 small)
3 Medium Tomatoes
1/2 a bunch Coriander Leaves
6 Green Chillies
1/2 cup grated Coconut
Salt to taste
4 tbsp Oil
1 tsp Mustard seeds
1 tsp Cumin Seeds
3 Fried Dry Red Chillies
1/2 tsp Black Pepper
1/4 tsp Turmeric powder
1 tsp Red Chilli powder
1/2 tsp Coriander Powder
1/2 tsp Garam Masala or Sambar Powder

Serves: 4 to 5

 
Method:
Remove the shell of the hard boiled eggs and cut them into vertical halves. Slightly fry them on all the sides. Keep them aside.
Fry red chillies and keep them aside.
Slice the onion and fry them with 3 tbsp of oil till they become gloden brown.
Grind the fried onions, coriander leaves, coconut, green chillies, fried dry red chillies, turmeric powder and salt to a paste.
Heat a pan with 2 tsp oil. Add mustard and cumin seeds and wait till they start popping up.
Add the grinded paste in the pan. Once the gravy starts losing the oil, add black pepper, coriander powder and garam masala.
Add little water to maintain the consistency of the gravy. Bring the gravy to a boil and add the lightly fried Eggs.
Cook for about 10 mins, add coriander leaves and mix well.
Serve hot with rice.
