Upma (Rulao)
Ingredients-
1 cup Sooji
1 tsp Mustard seeds
1 tsp Urad Daal
3 green Chillies split into halves
3 tbsp cup Grated Coconut
9-10 Cashew nuts(Optional)
3 tbsp Ghee
2-3 Curry leaves
2 cups Water
3 tsp Sugar (or according to taste)
Salt to taste
Serves - 3
Method-
Heat 1 tsp ghee in a pan and fry the pieces of cashew nuts till brown in color. Once done, keep them aside.
Add remaining ghee and add mustard seeds. When they start to splutter, add urad daal, curry leaves, green chillies and saute for few secs and lower the heat.
Add sooji and roast for about 5-7 mins till you get the aroma of sooji . Ensure not to turn it into brownish color.
Add water, salt, sugar, grated coconut to this and mix well. Close the lid and allow to cook for 10-15 mins and turn off heat.
Upma is ready to be served for breakfast.
